This chapter focuses on Art Activities for Young Children - the title of the chapter. An activity that is too open-ended for children is free painting. Children typically free paint in solitude which is no necessarily a bad thing, but learning is most active through social interaction with peers. Activities that are too closed would be any activity that the teacher controls. I don't mean control over the class, but hust the activity itself. Perfect activities that are described as "Rich Art Activites" in the chapter - consist of connecting to the world allowing children to make choices and avoiding recipe-oriented activities.
